The latest upgrade gave me AI thinking it can do things better than I can - for example, summarizing something and not letting me have the PLEASURE OF READING! Or it decides which email is important! I realized that for the younger generation, reading chapters of a book, or a long article, is too much work, but a lot of us LOVE TO READ!

You’re really not alone. Unfortunately we are now the product not the customer.
After turning AI off I found the only thing I needed to do was turn off the email sorting which also makes a mess of things.
I find it’s better to use the email Apps for my email provider but of course that doesn’t work if you use Apple email.
Thank you for asking! AI is a bug, not a feature.
Go to > System Settings > Apple Intelligence & Siri, and turn off Apple Intelligence.
That removes all the features of Apple Intelligence.
