You cannot purchase unlimited GB. Storage is not like your cellular service provider's data plan.
There is a limit. You can purchase up to 12TB of iCloud Storage however. That's a lot of iCloud storage. Are you seriously using up more than that?

Note, that iCloud+ storage has no effect on your devices local storage capacity. Local storage cannot be changed. It's a physical chip inside the device.
