How can I fix IMAP server not responding on iPhone?

First, make sure that you have a good network connection. Try using Safari to visit Apple.com so check if you have a good Internet connection. Then, visit Google.com using Safari and make sre that you are able to login. That ensures that there is not a problem with your account. If those steps work as expected then try the following to fix the problem with your Google account in Mail:
- Back up iPhone - Apple Support
- Update your iPhone or iPad - Apple Support
- Remove the Gmail account: Add and remove email accounts on iPhone - Apple Support
- Restart the iPhone
- Add the Gmail account back: Add and remove email accounts on iPhone - Apple Support
