2 questions Apple mail and language

1° I use both Italian and English. English as a manin lang as I had Macs since the first Mac and used English since. However after updating my Macstudio M1 to Sonoma 15.3 every new window I open brings the language to English. This is boring as the layout is different and I get several errors while typing. Before I had Eng as the main lang and Ita as second, but this did never happened the computer recognzed the language I used, left the menus in Eng. Now I dont know if this update doen't recognize the language i'm using,

2° IN my Apple mail I want to see the usual "all mailboxes" on top of my mail accounts as I have several Icloud and other accounts instead the list begins with Favourite and to see the other accounts I need to open them one by one to see the different inbox and other folders.

Any suggestions? Thamks

Thanks a lot for your kindness and time, however while the email suggestion solved my problem as for the language I'm still in troubles.

Everytime I open a new window in Chrome or even Adobe, or other apps, Mail replies or mail to read no matter what was the language I previously used the menu bar turns into English.

Also this happens if I'm read a French, or German page none of which are in my selected languages list as I can read but seldom write in these languages. In my langua system list I only have English (as the menu bars are in english for all apps) and I use and Italian only with Bbedit, Word to write and read Italian pages in Chrome emails.

Is your problem that your keyboard layout does not automatically switch to Italian when you open BBEdit, Word, and Chrome?
