How do I update payment method for an 18-year-old in Family Sharing?
Apple account does not let us enter for my major child his own card information for payment

If the family organizer has purchase sharing enabled then none of the other family members can add their own payment details. They can add store credit, e.g. via gift cards, which would normally be used first, but otherwise purchases get charged to the organizer's payment method. If you turn off purchase sharing then relevant subscriptions are still shared, but each member then pays for their own purchases.
