When you say "you guys" are you asking Apple or your cellular carrier?
Your carrier determines what is displayed under your cellular settings. I have no problem seeing mobile data usage details. Nothing has changed in that regard on my phone using AT&T service.
How can I check mobile data usage on iPhone 14?
