Scanning from iPhone - Auto Shutter OFF?

I Agree.

I would like to set the Auto Shutter Default = OFF.

But no such default (that I can find) exists.

Note, that Scanning with iPhone is not limited to just Notes. Many other Apps use this iOS utility.
