MacBook Air 13 M3, I can’t check the serial number. Can't find the device. I want to make sure that my product is original!

Flip that M3 MacBook Air over. There will be engraving near the front of it in tiny print. Shine a bright light on that content and the last entry will be the serial number of the device. If that matches what you see from the menu > About This Mac panel, then you have the real deal and the motherboard has not been replaced.

If no information is returned, that doesn't mean the product is counterfeit, just that certain server databases may not have been updated with the product info.

Where, exactly, did you buy it?
No. It is not “completely new”. You did not buy it from Apple or an authorized retailer, therefore it is not “new”. It was “new” for the individual who first purchase it from Apple or an authorized retailer.
Again, there is nothing for you to “check”.
If you’re unhappy about it, return it to whoever you got it from and get your money back, then go buy one from an authorized source.

You bought a used machine from a private individual. All bets are off. there is no way for you to verify anything at all using the serial number.
it was in original packaging! I opened all the fillings myself. Activated it myself. The product is completely new!
actually everything is great. works properly, all functions work. AppStore works as it should. No problem. I'm worried that the number doesn't work and that's it!
