Uninstall and reinstall GarageBand
GarageBand - when I hit the red icon to start recording a track, it doesn't record
MacBook Air 13″, macOS 11.7

You should have the little circle icon, like in the track I posted so that you can turn on recording for that track.
You also need a record enable on each track, *another* red circle.
