How do I record calls without notifying the other person on iOS 17?

I updated my iPhone to iOS 17 and now, when recording calls, the other person is notified. This poses a problem when I need to record threatening calls for my own protection. When I’m on a call and need to record an important conversation the person on the other will be notified
