How can I resize an email window on my Mac?

Ok I'll start—

did you quit Mail.app and relaunch it holding the shift key down?

You can minimize a window by first clicking the green dot in the top left of the window, and if you want it fully minimized, clicking the orange dot.

FWIW, the screen shots you posted have nothing to do with Apple's Mail program.
