Not sure I understand the ask.
Deleting an app doesn't do anything to any existing documents you have (other than render them un-openable until the app is re-installed).
In addition, Freeform typically uses iCloud to sync documents between devices. As such, your files aren't even stored on your device, further insulating you from losing your data.
Besides that, at least on MacOS (I haven't verified iOS), Freeform is a system-level application installed as part of the OS. As such, you don't have the ability to just delete the application - at least not without jumping through hoops to bypass the system security features.
So I don't think deleting the app and reinstalling (if it's even possible) is likely to help much.
