What do you have here:
- View your purchase history for the App Store and other Apple media services - Apple Support
- View or cancel app subscriptions on iPhone - Apple Support
You are not charged by Apple without double clicking the side button with the amount showing on the screen, followed by verification with Face ID/TouchID or Passcode. That is not something that can happen by accident. If you give your Passcode to someone else, then you have authorized them to use your device and that includes purchases.
If you are seeing the charge some place else, then you will need to provide more information on what you see and where you see it.
