How do I change or remove the default contact photo on my text message screen?

My text message screen has one of my contacts picture at the top of the screen - not my photo. This is on the main text message window

I believe you are referring to one of your contacts conversations being pinned on the top of Messages. Hold on it then tap Unpin.
