Purchases are authorized by double clicking the side button with the amount clearly shown on the screen followed by verification with FaceID/Passcode. It is not something that is done by accident, so if you do not need to use it, don't purchase it. Any free trial must be cancelled at least 24 hours before the trial period ends to avoid charges. That is also clearly stated on the authorization screen.
