How do I switch Apple Watch from one line to another?

What are the steps to log my other line off of my Apple Watch and switch to another one of my lines?

More unnecessary changes - Apple Watch control center I am fuming about the change of now having to press the side button instead of swiping up for the Apple Watch control center. It is a much slower function, requiring 2 movements, when you are in a split second hurry and need to ping your phone. Can this manually be changed back on my watch? Stop changing things that don’t need to be, just to say something is different. Seriously irate.
