How can I remove the emoji next to my name in email messages?

I would like to get rid of the emoji that is inserted next to my name in my email messages, please tell me how.

You may want to see if the tip below works for deleting the emoji from your own card in the Contacts app:

Add or change contact pictures in Contacts on Mac - Apple Support

Eg: says:

"Delete a picture

Go to the Contacts app on your Mac.
Select a contact.
Choose Card > Clear Custom Image.

You can’t delete monograms."

(NB: Seems "monograms" are the grey / white initials that are the default "picture" used.)
