Your MacBook Pro (15-inch, 2017) had four USB-C (Thunderbolt) ports, and could drive up to four external displays at the same time as the built-in screen.

A 15" MacBook Air with a plain M3 chip only has two USB-C (Thunderbolt) ports. It can only drive a single external display with the lid open – two (with limitations) with the lid closed.

I would suggest that you look at 14" MacBook Pros with M4, M4 Pro, and M4 Max chips. These MacBook Pros have three USB-C (Thunderbolt) ports, plus a HDMI port and SDXC card slot not found on the MacBook Airs. Those with plain M4 and M4 Pro chips can drive up to two external displays with the lid open. Those with M4 Max chips, up to four external displays with the lid open. The GPUs get stronger as you go from plain M4 to M4 Pro to M4 Max – but you may not need the higher-end GPUs unless you plan to run a lot of displays, or will be doing 3D gaming.
