Is it possible to create a playlist that pauses after each song on Mac?

Make sure each track in the playlist its unchecked. Since iTunes/Music will not automatically advance to an unchecked track, this will cause it to stop at the end of each track until you start the next one.

If you don't see the checkboxes, enable them in Preferences.
