To cut a long story short I bought a new iPhone did all the transfer stuff from 8 plus to XR. For some silly reason I reset the 8 plus wiv the intention to transfer data from XR back to 8plus as having to sent XR back but the 8plus won’t do it …why?

You can not transfer data or restore a backup from a device running a newer version of iOS to a device running an older version.
The iPhone 8 can not go past iOS 16. The XR can run iOS 18. Assuming the XR is running a later version than the 8, you can’t transfer “down”.
The transfer process was designed to facilitate upgrading to a newer device, not going backwards.

It was just while I sent back the XR an got a replacement back I can’t be without a phone but yeah makes sense not having same version iOS
