I have a 13 pro and I’m getting a new phone. Will my apple care roll over to that phone or I need to cancel the apple care and add it to the new phone??

If you prepaid for multiple years you can cancel it and receive a partial refund. It can also be transferred to a purchaser if done in a timely manner.
You’ll need to purchase Apple Care for the new device within 60 days of purchase.
