How do I save or print my iPhone 12 Pro text messages?

Although it's possible to screenshot the messages and print the screenshots, that's a lot of work.

I recommend you buy either TouchCopy or iMazing. Both are apps for your computer that will let you archive your messages to a pdf or text file which is easy to print, email or save.
