I have run through all of the ‘fixes’ and none have worked. Switching the headphones on and attempting to pair the headphones still look for my old iPhone 15. I have tried unsuccessfully to clear the internal memory from the headphones but it also doesn’t work. I’ve run out of ideas and think that maybe there is something saved in the cloud that relates to the old setup?

make sure it do not have an active connection with the 15 if you must turn off the Bluetooth on the 15
and then put it into pairing / discovery mode

If it does not show up under Bluetooth devices in settings when put into pairing mode, then I would suspect there being an issue with the speaker. of cause, one can troubleshoot by attempting to pair it with another phone, computer, or tablet to verify it's demise.
I suggest that you contact Bose support and they should be able to assist you with this.
