Do you mean to grab and lift an object like this?
When you touch the object, a menu will pop up to "Copy, Look up, Add Sticker, Share…"
I'm not sure if I've seen a menu choice "Remove Background" on an iPhone. That choice is available on a Mac when you right-click on an image and choose Quick Actions:
But I'm not sure about the iPhone…
