How does Time Machine work between different versions of OS?

I bought a new/used MacBook Pro, the O2 on my new MacBook is Sequoia 15.3.1

My very old Mac book is running Mojave 10.14.6

How does this work? If I take Time Machine backups, made under Mojave, and try to copy them to a MacBook with Sequoia, does that work?

I probably only need my email copied to my new computer. For my programs, I will have to buy a new version anyway.

I certainly don’t want the old O2 restored onto the new computer. Is Time Machine smart enough to not do that?

I think I can just drag and drop copy all my other files to my new MacBook. Am I missing anything?

Migration assistant doesn’t work, my old hard drive is larger than my new one and it doesn’t give much control over what to copy.

Thank you!

Since Migration Assistant won't work - too much old data w not enough new storage - you don't have a lot of options. You will have to do this manually by dragging and dropping, but it's easy to drag entire folders to an external drive. If you've kept your files fairly well organized then it's easy to do by dragging entire folders at a time. You could drag your entire home folder to an external drive and have captured most, if not all, of your personal data.

Or use a utility such as Carbon Copy Cloner on your old Mac to copy the home folder and everything in it to an external drive. Then manually copy just the files I want to my new home folder. You can take your time if there's no hurry to sift through your stuff.

Either way, you process really can't be automated. You'll have to manage it one way or another.
