Is temperature turned on? from your iPhone>Watch>Privacy>Wrist Temperature>toggle on

All I can suggest if you have all toggle on correctly is to force restart your watch and your iPhone.
If that does not work, if it were myself, I would
unpair the watch from my iPhone,
delete the watch app
reboot the iPhone
re download and install the Watch App
And then pair back the watch setting it up as new.
Do you always have a sleep icon at the top of your watch when this mode is on?
