How can I access advanced printing options on a Mac for an Epson printer?

I have to print several documents with quality and my MACPRO does not have advanced options to print, I have tried different options and nothing helps me, my question is how does a printing company use a Mac and its prints are perfect.
My printer is an Epson, I need options for print quality, color an others, apart from being able to do simple things like cleaning the heads, in the photo I show the options that I get from a Windows computer.
