“Read” vs. Read at time”

So I just got a new IPhone 16 Pro. I was going through my messages and a number of people ,who I can confirm do not have read receipts on for me, now have messages that display “Read” with no time stamp. Previously the same exact message only displayed “delivered”. Otherwise there are still messages from people that only display “delivered” and plenty that display at read but with a time stamp. What’s going on?

When did I read that message?! I’m trying to determine exactly when I read a message. I do not have my read receipts on, and don’t want to turn them on particularly, is there a way to see when I read a text message on my own iPhone, I have already received and read said message, but don’t recall doing so, so I’m trying to see some sort of history as to exactly when did I read this message?
