If I setup my cellular watch with my sim card and the transfer the sim to another phone will the watch still keep the sim set up

Hi I asked apple Support and they said unless you set up another watch it will stay as it is a seperate e-sim and not really linked to the physical sim other than it has the same phone number but that is proccessed by the carroer

Yes, if you unpair the watch from the old iPhone, it will be erased. Restoring your new iPhone from the backup of the old iPhone will also give you the option to restore your watch from the latest watch backup, created before the watch has been unpaired.
If your cellular plan for the watch is not activated after paring the watch again to the new iPhone, you will have to contact your carrier about that.
