How to use a cellular Apple Watch as a standalone phone for work

I have an iPhone with my personal number and an apple account. I bought a cellular watch to treat as a standalone phone for work. Prior to connection it was reg'd as mine to the phone as well as main account and collected data, could be changed via the phone and so on, had credit cards and double tap. When I connected it to the cellular plan, I HAD to set it up as a family member, still had to pair with the phone which I expected. Now, despite sharing everything, nothing I had is on my watch is on it, and now it is far less functional not having a phone connected to it via the same account. How does one get their Spotify, sleeping apps and Strava and why wont the watch still connect with the phone to enable apps and such, it only has very limited modifications available. The apps are in the little watch store, but say I need a phone, on the phone, I have no accessibility to apps in any way, like to change the install device or whatever. And I can't load credit cards on to the tap, only an account balance or a bus pass, despite cards being authorized on the separate account I made for the watch family management. Surely apple has another option aside from what is clearly deemed a child for professionals who want a little flexibility. Any guidance would be greatly appreciated. I just wanted to be able to leave my phone at home...
