No, you cannot update the YouTube app on your iPhone 6 to the latest version.
The current version of the YouTube app requires iOS 15.0 or later. You can update an iPhone 6 as far as the latest version of iOS 12 (currently iOS 12.5.7) – but you cannot update an iPhone 6 to iOS 13 or higher.
You could try accessing the YouTube site through Safari, but given how old iOS 12 is, I don't know if that will work. You may want to consider purchasing a new iPhone that Is compatible with iOS 18 – preferably a recent one like a 15-series or 16-series phone that still has years of updates ahead of it.
