Whenever I take a picture of a beautiful sunrise or sunset, the camera never captures the actual colors. Purples, pinks & peach tones always turn to orange and I can’t get the “softness” to come through. These cameras are supposed to be amazing..? What can I do to remedy this?

Have you checked, if you have a filter applied? Or if the Settings in Photos are set to set the Display to Full HDR? These setting might change the color range you are seeing.
Therwise, what you are reporting is typical, if your iPhone is using Deep Fusion to create a HDR photo. The Camera.app is deciding automatically, if it is useful, to take the photo as a HDR photo. We cannot disable this on the more recent iPhone models, see:
To avoid HDR you could take the photo as a RAW photo and see, if the colors will be more natural:
