Apple recommends turning off Apple Cash, and removing cards and passes from Apple Wallet.
Thinking along the same lines, I deleted mobile banking apps and their stored passwords. Those I restored manually after getting the phone back.
You will probably need to turn off Find My, but you should "Never give your Apple Account password, device passcode or account security details to anyone else." When I got my iPhone's battery replaced at an Apple Authorized Service Provider, I took a printout of the Support article with me just in case they tried to give me problems with this. (They didn't.)
Before I took my phone in for service, I updated one of my Mac's local backups, so that I'd have an up-to-date backup of my iCloud Photos library. (I have my Mac set to always store full-size photos.). I was not expecting anything to happen to my iCloud Photos library, but there are a lot of photos of old family photos in there and I didn't feel like taking any chances.
Once you get your iPhone back, don't forget to turn Find My on again.
I had to make an appointment, drop my iPhone off, then come back later the same day. Things went smoothly except that the service provider peeled off the screen protector. (I didn't complain about that.)
