I just recently got iPhone 16e. I downloaded the Gmail app and still have my Mail app on the phone. I'm getting messages that my storage is 100% full and won't be able to receive new emails starting in April. Can I take the Mail app off my iPhone? Will doing this also free up storage space?

This sounds suspiciously like a scam, especially since they give you a deadline.
Either that or your gmail storage is full and they are the ones who will cut you off in 2 weeks...
Open the Settings App, then General, then iPhone Storage. What does it show is remaining out of the available space.
Then in Settings > Tap Your Name At the Top, then tap iCloud and see how much space you've used in iCloud out of how much space you have in iCloud.
My guess is you are likely close to being out of space in iCloud. You get 5GB free when you open your account and that may just not be enough space for iCloud now.
Where, exactly, is the message coming from?
If it's not a scam, then it's coming from Google and has nothing to do with your phone.
Log into your google account from a browser and see what it says there.
