No 5G Seen with Uber:
A. Enable Cellular:

If 5G is not available in your location, then it will not be an option.

Uber Restricing your Cellular Use:
Uber's not out there to get you. All you will see is the signal that is being broadcasted. If it comes down to being suspicious of Uber, you can always look into going about an investigation. Log In here: Call Uber Support. However, when in a large building such as a retail store that has a lot of metal around you Cellular service detection can be of issue, and you'd have to switch to WiFi.
