Why can't I save draft emails in a separate folder on my old Apple Mail?

Old Apple Mac Email - In the past when I used to type a new email and keep as draft or minimise it could keep it minimised in the bottom right near the thrash as a separate folder/file so I could easily open in the future. Now it no longer does that, Thanks
