Bought one before my trip and named it luggage and after the trip would like to use it to locate my wallet. How do I change the name? Also, how do I get it to show up in my devices on my iPad?

Open the Find My app, tap in the AirTag until you get the detailed info posted, and down at the bottom is Rename.
The AirTag should show up automatically on any device using the same Apple Account.
If you’re not using the same Apple Account everywhere, you can either change to one account, or enable and use Family Sharing.
