change default writing style on opening a new Note in Notes app

ios 18.3.2 on ipad air 4th gen. Notes app

I cannot choose the topic Notes in the Ask a Question menu, nor does it allow me to enter my own topic in 'Other'

My Q is, how may i change default writing style, when opening a new Note in Notes app

my older ipad always opens in simple writing style.

This ipad requires me to select for each new note, if i want to type in TITLE, Heading Subheading etc... until eventually i get the option 'body' of text

Can I reset this to open to 'body' text by default?
