Apple will never send a message about somebody using Apple Pay. Transactions are anonymous to Apple and the merchant.

Any text you receive will be scammers. Do nothing, except call every bank involved and report your iPhone stolen. The data in the iPhone is secure and will stay secure as long as you don’t cooperate with the scammers in an attempt to get your iPhone. No need to panic.
