That depends on whether you know the current one.

If yes, Settings, touchID & passcode, change passcode.

If no then If you’ve forgotten your iPhone passcode or your iPhone is disabled – Apple Support (UK)

or If you see an iPhone, iPad or Apple Vision Pro unavailable message or Security Lockout screen – Apple Support (UK)
