How can I change the color of text messages on iPhone?
Would like to have text message or at least names be in color.

There are no color options for messages other than the standard UI Light/Dark settings. You can send feedback to Apple here:
There are always 2 types of users with one wanting additional features and the other not wanting to have any changes as that only increases complexity. It seems like Apple lands somewhere in the middle in most cases. Sending feedback to Apple is the best way for Apple to guage what features are most requested.
