I'm trying to turn on private browsing on my iPad, but as I'm following the tutorial on the apple website, I notice that I don't have the option for private browsing and I don't know where to find the setting that will allow me to use it.
What you do is press & hold the Safari icon until a shortcut menu appears, then simply select New Private Tab. ⇣

the problem is that the 'new private tab' button doesn't exist.
