After the latest update, I noticed I do t get the animated “fireworks rings” whenever I close a fitness ring.
What settings do I need to go back and check/change?

You should first try the old force restart, by holding in the side button and digital crown for 10 seconds until you see the Apple logo.
Also
Make sure that you have Goal Completions toggle on in your notifications.
From your iPhone>Watch>Notifications>Activity>Goal Completions>toggle this on.
I have read that you may need to toggle off Tap to Show Full Notifications for it to work.
From your iPhone>Watch>Notifications>Tap to Show Full Notifications>Toggle this off
Failing that if it were myself I would unpair the watch from my iPhone, then pair it back setting it up as new.
Thanks for responding. I tried all of those but so far they haven’t worked.
I even tried privacy settings but no avail.
