If you began writing in Pages and then quit Pages without ever manually saving the document, then it is gone forever and no recovery is possible as there was nothing left to recover.
If you began writing in Pages and manually saved the document to a legitimate filename (not Untitled.pages), then Pages autosave would be enabled to save your progressing document changes. The document would be in the associated folder shown during that first save event.
If you have selected iCloud Drive in the Finder Settings > Sidebar (enable it if you haven't), then launch a new Finder Window and click in its iCloud > iCloud Drive sidebar entry. If you see a Pages folder on iCloud Drive, your document may be in that folder. If not, and you have not deleted the Pages document, then the next fallback would be a Spotlight Search.
Back in Finder Settings > Advanced, have this setting:
Open a new Finder Window afterward, choose your home folder, and in its search field, enter the following:
kind:pages
That will find every Pages document that you have ever created and hopefully, you remember the name of the missing Pages document. Also, click the This Mac location if you did not find it in the home folder. When you find the Pages document, click once to select it and then enter option+cmd+i to open a Get Information panel and observe the Where: entry to see where the document resides. You can also select Finder View menu > Show Path Bar which will display the path sequence at the bottom of the open Finder Window when you click once on the document.
