I've got an Apple Watch complication that runs a shortcut that runs a Home Assistant script and I'm not a fan of the default icon it's using. In the Shortcuts app I've found where you can add to the home screen and this lets you pick a custom icon for my iPhone, but is there the same option for the Apple Watch?
To customize the icon of a Shortcut used as an Apple Watch complication, open the Shortcuts app on your iPhone and tap the “...” on the shortcut you want to use.
Then tap the name at the top to enter editing mode, and tap the icon next to the name to choose a new glyph and color.
After customizing, tap Done to save your changes.
This icon will now appear on your Apple Watch face if you add the Shortcut as a complication.
To do that, long press your watch face, tap Edit, go to Complications, and select the Shortcut complication, then choose your customized shortcut.
Note that while the icon will appear on the Watch, the color won't show due to watchOS limitations.

Thanks for the response. I went through the process you outlined, but it doesn't seem to effect the complication icon on my watch. In the Shortcuts app it looks like I want (brown poo emoji), but on my watch it's still what I presume is the default icon (bottom left complication). Any idea?
