If the Google apps that you want to install require a version of iOS that your iPhone 7 cannot support, you do not install them.
For instance the Google app requires iOS 15.0 or later and so should be compatible with your iPhone. The Gmail app requires iOS 16.0 or later, which means that you cannot use it on your iPhone. (As an alternative, you might want to connect your Gmail account to the built-in Apple Mail app.)

Sorry, but your question doesn't make a lot of sense.
If you have an iPhone 7, most developers, including Google, no longer support it.

Depending on whether or not the app source code is available…
▪️Get the app source code, remove the use of any features requiring newer iOS, rebuild the app, code-sign, and install the app.
▪️Reverse-engineer the app binary (where that’s legal), remove the use of newer features from the binary, code-sign, and install.
▪️Replace the iPhone 7 with a newer (used, refurb), or new iPhone. Any recent iPhone will be far more capable than iPhone 7.
