Changing *back* to default font color in Apple Notes?

I am using the "dark" appearance on my iMac. When I change the font color from default > red, for ex, what color font am I to select to return back to original default color?


If I choose white (when using the "dark" appearance), I can see the text, but if I switch notes and return back to this note, that same text now appears as black on the dark background (if I look closely, I can see the black text, but if one didn't know the text was there, one would miss it). If I click on that blacked out text, it then switches from the black to a white font and I can see it.


What is the correct default font color I should be switching back to so I don't encounter this "blacked out" font in all of my notes?


Or is there some other work around so I can apply the default font color onto the text so it will appear as though I never changed any font color within the note in the first place?
