I turned off the cellular service on my phone and the icon went gray, but when I went back to what I was doing I noticed that the cellular icon at the top of the screen showed that cell service was activate. I called my wife and the call went thru, so cell service is still working. Has anyone else noticed this?
I assume you turned Cellular Data off in the Control Center. This does not turn off cellular service for phone calls. It is Airplane mode that is used to turn off cellular service that includes Data and Phone. It will turn off Bluetooth and Wifi as well, but you can turn those individual services back on if you wish even with Airplane mode turned on.

The switch in Settings is only for Cellular Data also. That would prevent things like Internet access, sending/receiving iMessages, or sending/receiving Mail when not connected to WiFi. Many cellular plans have unlimited talk time, but charge extra if you exceed your Cellular Data allotment. This switch gives you control when your phone is able to use Cellular Data.and does not affect voice calls.
