I have got an iPhone 16 pro max and, unlike other iPhones, to turn the phone on, all I need to do is just tap the power button, rather than press and hold.
I tried it on other iPhones in Apple Store but there was no such issue there. I even talked to the staff they said it’s not a major issue, few of the phones have this issue.
is there an option to change that in the settings

So if you are clicking the Power Button and then seeing the Apple Logo before your iPhone turns on, this is not normal behavior and I suggest you return and exchange the iPhone for a new one. In most places you have 14 days to do so.

Do you have any cases, accessories, on the Power Button? If so, remove them and try again.
When iPhone is turned off, it has always been to press and release the Power Button to turn it on. You cannot change that.
But when iPhone is powered off, you have to press and hold the Power Button until you see the Apple Logo to turn it on.
iPhones in Apple Retail Stores may be different as they are specifically retail models and have different settings and features.
