When I run the iWork09 instal Disk operation stops and a por up saying iWork '09 requires QuickTime 7.5.5 or later.

QuickTime 10.x is a ‘totally’ different framework than QuickTime 7.x (a re-write from the ground up with only partially similar features). One way it differs is the compatibility with macOS versions: QuickTime 7.x (32-bit) requires macOS 10.14 or earlier, and isn’t supported on macOS 10.15 or later (only 64-bit apps).
This may mean that iWork ’09 may not be compatible with macOS 10.15 or later. However, the suite components Pages, Numbers, and Keynote are available for macOS 10.15 or later in later versions (although the really latest version now requires macOS 14). Legacy versions may only be available officially, if you have downloaded them before from the Mac App Store through the matching Apple Account, though.
Is there any particular reason that you are fixated on getting the iWork ’09 versions?
Else suites like LibreOffice may be suitable? See here for older versions for compatibility with older OSes.
